Welcome to My Vegan Journey
My Vegan Journey is a chronicle of my quest for healthy living by going vegan and still enjoying delicious food. I am a runner and hope to improve my workouts by eliminating all animal products from my diet. It's all about trying different Italian dishes and delicious meals and transforming them into vegan versions with an Italian twist.
I have already switched to eating mostly vegetarian and wanted to see if I can improve my health and well-beng by switching over to veganism. When I first switched to eliminating all animal foods, my running improved. I especially noticed a difference in hoiw I felt after my long runs. I wasn't as sore as I used to be when I ate meat and cheese and I always feel energized.
